3 cups sugar
1/2 cup white corn syrup
1 cup milk or cream
3 squares chocolate
4 tablespoon butter
1 teaspoon vanilla
1 cup pecans
Mix sugar, syrup, milk and broken chocolate together. Over low heat stir mixture until sugar has completely distributed. Keep sides of pan wiped down until wet brush or cloth. Increase heat and do not stir again.
When candy forms soft ball, candy is done. Turn off fire, add butter and let stand until cool. Add flavoring and beat utnil it is thick and heavy. Add nuts. Turn into buttered pan.

Fudge
2 cups of sugar
2 squares of unsweetened chocolate
1 cup of cream or milk
1/2 cup karo
1 tablespoons butter
Stir over low fire until sugar and chocolate melts. Raise the heat and cook until it is a good soft ball.
Add butter and let stand 20 minutes.
Add vanilla and beat until creamy.

2 cups white sugar
2/3 cup corn syrup
1/3 cup water
2 egg whites
1 teaspoon vanilla
1/4 teaspoon almond
1 cup pecans
Cook sugar, corn syrup and water until syrup spins a long thread or 230 degrees.
Add 1/3 of syrup to stiffly beaten egg whites.
Place remaining syrup on fire and let it boil one minute, then add another third to egg white mixture beating constantly.
Boil the remaining syrup one minute more, then add to egg mixture and continue beating until candy is creamy.
Add flavoring, nuts and pour into buttered pan to cool.

1/4 tsp. salt
3/4 cup chopped nuts

Combine karo, water, salt and sugar, boil until a little tried in cold water is brittle. 300 degrees.
Beat egg whites stiff and gradually beat in boiling syrup.
Whip until it begins to stiffen, add vanilla and nuts.
Beat more and pour into a pan slightly oiled.
When cold cut into squares.

1/4 teaspoon soda
1 teaspoon vanilla
2 lbs. nut meats, chopped fine
Pour 1 pint sugar into heavy aluminum or iron skillet and place it over a low fire. Begin stirring with a wooden spoon and keep sugar moving. Completely melt the sugar (could take 1/2 hour) it should be the color of brown sugar.
While you are melting the sugar, put the rest of sugar and milk into heavy pan over low heat.
Pour the boiling milk and sugar into browned sugar, small stream. Continue cooking and stirring until mixture forms a ball when dropped into cold water.
Turn off heat and add soda, stirring vigorously as it foams up. Add butter, allowing it to melt when stirring.
Take off stove and set in a cool place for 20 minutes.
Add vanilla and beat. Use wooden spoon and beat until mixture is thick and heavy.
Add nuts and mix.
Put in pan, cut when cool.
